Remember the day my husband ate all the breakfast food in the house?
Well, I managed to come up with this:
Vanilla Bean & Pecan Breakfast Quinoa
Time: 25 minutes Serves 2
Ingredients
- 1/2 c. quinoa, rinsed
- 3/4 c. unsweetened almond milk
- 1 vanilla bean, seeds scraped
- 1/4 tsp. vanilla
- 1/2 tsp. cinnamon
- 1/4 c. chopped pecans (optional- add pecan halves for garnish)
I like to cook quinoa in the rice cooker so I tossed all of the ingredients in and let it work it’s magic. If you prefer to use a saucepan, combine all ingredients and cook over medium heat until the quinoa has absorbed the milk.
Fair warning, your husband might only let you have 2 bites then finish the rest himself.
Sigh.

Would need to replace pecans with walnuts, but yum. This looks like the best breakfast ever!
